Apple Raisin Salmon

You'll need:
1 Large thawed Salmon Fillet (mine was 12", I cut it in half to fit in the dish and for portioning)
1 Apple (I used a Gala apple)
2 Handfuls of Raisins (roughly 3/4 to 1cup, as desired)
2 Tablespoons Cinnamon
1/8 Cup Brown Sugar
Herbs de Provance/ Italian Herbs to taste
Lemon Pepper to taste

*Measurements are approximate, I don't usually measure anything*

Step 1: Preheat oven to 350 degrees F.
Step 2: Chop one apple (I used a Gala apple) into small pieces.
Step 3: Line bottom of dish with apples and raisins, then cover with brown sugar and cinnamon.

Step 4: Place Salmon on top of fruit and season with Lemon Pepper and Italian Herbs to taste (try to avoid seasoning the fruit).
Step 5: Cover dish with aluminum foil and cook for 25-30 minutes.
Great with Cous-Cous, rice, or other side (and of course some wine)!
