I've been on a new (and somewhat sporadic) health kick lately, and here's one of my latest creations! Probably not that original, but its yummy.
1 Large bowl lettuce (pre-cut or hand-torn, doesn't really matter)
1 Handful (to taste) crushed pecans or other nuts
2 Handfuls dried cranberries (about half a pouch of Craisins works too)
2 Snack cups (approx. 2 cups) drained mandarin orange slices
Top with balsamic vinaigrette and voila! Yummy salad full of nutritious things and plenty of texture!
